The key to uneventful food conversion is to take your time introducing the new food.
For the first few days your new pet is at home, make no changes in his diet. Providing the diet has been approved by your veterinarian, feed the same food the previous owner or breeder or pet shop fed him. Then begin mixing the new food to the old in a 50:50 ratio. Increase the new food and decrease the old over a few days so that eventually the pet eats only the new food.
